How might one take out a defensive array? or is it even possible? Can this be done? I have yet to do so.

If you fight class 4 at a base it only takes 5oo ap, but you have a random chance whether you hit it or not depending on how many class 4 they have. It is possible, you'll get one sooner or later

i would suggest to construct a fleet that blasts all the buildings in that base.

there are several base flattening fleet setup availble.

A cheap way of doing it

your class 1 vs enemy class 4: V ^
you:
7 bounty hunters
161 blockade runners
1 evaporator
enemy:
1 shipyard
1 research center
1 defensive array

106 blockade runners vs 1 research center
55 blockade runners vs 1 defensive array
1 bounty hunter blasts 1 ship
1 evaporator vs 1 research center

1 defensive array defends in class 1: 3 ships

losses:
you :
3 bounty hunters
enemy :
1 defensive array
score in this subbattle: -12

I used evap and bounty hunter as a redundant backup. A bounty hunter got it though.
